COURSE CURRICULUM

The Bachelor of Science in Nutrition and Dietetics requires a minimum of 120 credits and combines a comprehensive University Core Curriculum with specialized coursework in nutrition, health sciences, biology, chemistry, and psychology to prepare students for professional careers in dietetics and healthcare. The University Core Curriculum develops essential academic and communication skills through courses in writing, public speaking, mathematics, biology, public health, ethics, healthcare systems, creative arts, and historical perspectives. Students also complete introductory health profession courses, research and writing classes, and foundational nutrition subjects such as food science, food culture, and nutrition preparation labs. The program’s required coursework provides strong scientific and clinical preparation through classes in microbiology, anatomy and physiology, biochemistry, general and organic chemistry, statistics, medical terminology, and psychology. Specialized dietetics courses focus on areas such as sports nutrition, nutrition and health, culinary nutrition, food safety, community nutrition assessment, nutrition communication, and nutrition throughout the lifecycle. Seminar courses guide students through professional development, safe food handling practices, community-based learning, and advanced capstone experiences that integrate classroom knowledge with practical application. Students also study healthcare leadership, research design, and health psychology to better understand patient behavior, wellness promotion, and evidence-based healthcare practices. The curriculum is designed to meet the competency standards required for future registered dietitians while helping students build analytical, scientific, leadership, and communication skills essential for modern healthcare environments.
