COURSE CURRICULUM

The Master of Science in Nutritional Science requires 30 units and is designed to provide advanced knowledge in nutrition, research, and specialized professional skills. The program includes 15 units of core courses such as Colloquium in Nutrition, Food Science and Packaging, Issues in Nutrition, Food and Packaging (GWAR), Biostatistics in Research, and Research Methodology, along with one advanced course chosen from options like Advanced Nutrition and Metabolism, Advanced Topics in Human Nutrition and Dietetics, Foodservice/Restaurant Management, Nutrition and Dietetics Leadership, or Package Design. Students also complete 9 to 12 units in a specialization area, selecting electives in consultation with a graduate advisor to align with their career goals in fields such as clinical nutrition, public health, or food management. The culminating experience ranges from 3 to 6 units and can be completed through a thesis (Plan A), a project (Plan B), or a comprehensive exam option, allowing students to demonstrate their knowledge through research, applied work, or examination. Overall, the program combines scientific study, research training, and practical application to prepare graduates for careers in nutrition, healthcare, research, education, or further doctoral studies.
