COURSE CURRICULUM

The Master of Science in Dietetics and Nutrition is a comprehensive 54-credit program designed to prepare students for advanced careers in nutrition, healthcare, and public health. The curriculum is structured over two years and combines scientific knowledge, clinical training, research, and hands-on experiential learning. In the first year, students build a strong foundation in nutrition science and healthcare practices through courses such as Medical Nutrition Therapy I and II, Advanced Nutrition Science, and Nutrition Throughout the Lifecycle. They also develop research and analytical skills through courses like Research Methods in Health and Well-being and Population Health, Risk Identification, and Management. A key component of the program is supervised experiential learning, where students gain practical exposure in community and public health nutrition settings, allowing them to apply theoretical knowledge in real-world environments.During the summer term, the focus shifts to culinary and food systems management, where students learn about food operations, sustainability, and nutrition in food service systems, along with hands-on training. In the second year, the program emphasizes leadership, advanced clinical practice, and research. Students take courses such as Leading Health Systems and Dissemination and Implementation Science, which prepare them to manage health programs and apply evidence-based practices. They also complete a major thesis project, demonstrating their ability to conduct independent research in health and nutrition. Additional coursework in nutritional assessment, counseling, and clinical nutrition further strengthens their professional skills. The program concludes with extensive supervised clinical training, ensuring graduates are well-prepared for roles as registered dietitian nutritionists, healthcare professionals, or public health specialists, capable of addressing diverse nutritional needs across populations.
