COURSE CURRICULUM

The Dietetics concentration within the Bachelor of Science in Nutrition and Food prepares students for professional careers in clinical nutrition, community nutrition, and food service management. Before declaring the Dietetics concentration, students must first complete specific pre-major requirements. Freshman or transfer students admitted to the program are required to maintain an overall grade point average of at least 2.75 and complete a set of foundational core courses with a grade of “C” or better. Only the first or second attempts of these courses are considered. The pre-major coursework totals 28 units and includes Basic Biological Concepts, General Chemistry I and II, Food Safety and Sanitation, Introduction to Nutrition, Principles of Food Preparation, Nutrition and Metabolism, and Introduction to Statistics. After meeting these requirements, students must submit a Major Change form to the Family and Consumer Sciences Department along with copies of their academic transcripts in order to officially declare the Dietetics concentration.Once admitted to the concentration, students complete a structured curriculum that includes both lower division and upper division core courses. The lower division core courses provide a scientific and foundational background in biology, chemistry, nutrition, psychology, and statistics. These courses introduce students to the biological processes related to nutrition, food safety principles, and the psychological factors that influence food behaviors.The upper division core courses focus on advanced topics in nutrition science and professional practice. Students study subjects such as nutrition education, food production and sustainability, cultural and social influences on food choices, and nutrition across the human lifespan from early development through older adulthood. Courses such as Research Methods in Nutrition and the Senior Seminar help students develop research, analytical, and professional communication skills needed in the field.In addition to the core coursework, the Dietetics concentration includes specialized courses that provide advanced training in areas essential for professional dietitians. These courses include Microbiology for Allied Health Students, Organic Chemistry, Systemic Physiology, and General Biochemistry. Students also complete professional nutrition courses such as Food Service Management, Community Nutrition, Medical Nutrition Therapy I and II, and Nutrition Assessment. Together, these courses prepare students with the scientific knowledge and practical skills necessary for careers in dietetics and nutrition-related professions. Students must also complete general education requirements to ensure a well-rounded academic background.
