COURSE CURRICULUM

The BA International Gastronomy Management program is structured to develop students’ knowledge and skills progressively over three years. In the first year, students build a strong foundation in restaurant management and international gastronomy, learning essential culinary techniques, customer experience skills, and gaining insights into the global food industry. This year includes multiple professional restaurant placements, allowing students to apply their learning in real-world settings. The second year deepens understanding of the gastronomy sector through modules on marketing, management principles, and sustainability, with continued professional placements to reinforce practical experience. Students also have the option to participate in international mobility opportunities, broadening their global perspective. In the final year, the focus shifts to advanced professional skills and strategic management within the food industry. Students engage in critical analysis, reflective practice, and leadership development, preparing for managerial roles. Specialist placements provide opportunities to review personal performance, lead staff development, and undertake consultancy projects, consolidating practical expertise. Throughout the program, students gain comprehensive knowledge of operations, marketing, and organisational management in gastronomy. By combining theoretical study with extensive hands-on experience, graduates leave equipped with the practical skills, professional competence, and strategic insight necessary to succeed in the international restaurant and culinary sector, ready to take on leadership and innovative roles.
