COURSE CURRICULUM

The MSc Food Technology – Quality Assurance curriculum provides advanced training in food safety, quality systems, risk management, and sustainable food production, combining scientific principles with industrial applications. The programme begins with Microbes, Food Safety and Health, which focuses on food microbiology, microbial control, experimental design, and the role of the gut microbiome in human health and disease. Food Control Management develops an understanding of national and industry-level food control systems that ensure safe and high-quality food production and distribution. Sustainable Food Manufacturing and Process Design covers food processing systems, unit operations, and pilot plant experience, enabling students to design efficient and sustainable manufacturing processes. Foodomics and Risk Analysis introduces modern “omics” technologies and data analysis tools used to detect food hazards and food fraud, alongside risk analysis frameworks for managing food safety across the supply chain. Food Product Reformulation focuses on developing improved food products while balancing nutrition, public health, manufacturing constraints, legislation, and consumer expectations. Applied Food Quality and Safety applies scientific and technical knowledge to real industrial scenarios, helping students identify critical control points and solve quality and safety issues in food production. The Research Skills and Project module allows students to conduct independent research, apply scientific methodologies, and present findings in a structured academic format. Overall, the programme prepares graduates for careers in food safety, quality assurance, and the global food industry.
