COURSE CURRICULUM

The MSc Food Processing Engineering with Advanced Practice programme combines advanced academic study with extensive practical experience to prepare graduates for leadership roles within the food manufacturing and biotechnology sectors. A central feature of the programme is the Advanced Research Project, a substantial 60-credit independent study that enables students to apply the knowledge gained throughout the course to solve real food industry challenges while demonstrating originality, critical thinking, ethical awareness, and the ability to conduct autonomous research through the production of a dissertation and research poster. The Advanced and Applied Practice module provides an additional opportunity to enhance employability through a 12-week internship involving at least 400 hours of professional activity. Students may undertake research and development projects, employer-led placements, virtual internships, or vocational internships with external organisations, all supported by academic supervisors and workplace mentors. The Food Analysis module develops expertise in food chemistry and analytical techniques used to assess food quality and safety, while Food Chain and Composition of Food explores the entire food supply process from farm to consumer, including nutrition, sustainability, and food policy impacts. Through Food Innovation and Product Development, students gain practical experience in creating new food products while considering manufacturing requirements, commercial viability, and entrepreneurship. Food Manufacturing Planning introduces the principles of process design, hygienic engineering, mass and energy balances, and the use of software tools such as CAD and Visio to develop efficient food production systems. The Food Processing Technology module examines traditional and emerging food processing methods, preservation technologies, and innovative industrial applications supported by laboratory experience. Food Safety Management develops an understanding of food hygiene, risk assessment, auditing, and safety management systems, enabling students to evaluate and implement effective food safety procedures within complex manufacturing environments. Together, these modules provide graduates with the scientific knowledge, technical expertise, and professional skills required to support innovation and sustainable development within the global food industry.
