COURSE CURRICULUM

The MSc Food Quality, Safety and Innovation at Abertay combines technical, analytical, and managerial skills to prepare students for careers in food production, quality assurance, research, and regulatory compliance. In the first term, students study Project Management, providing essential skills to plan, organise, and oversee food-related projects efficiently, while Health, Safety and Environmental Management focuses on applying sustainable practices, regulatory compliance, and ethical frameworks in both industrial and research settings. The Food Safety and Microbiology module equips students with a comprehensive understanding of hygiene management systems, microbial risk assessment, and methods to ensure the safety of food products. In the second term, Research Methods develops both qualitative and quantitative skills, enabling students to design experiments, analyse data, and apply scientific reasoning to food quality and safety challenges. Food Chemistry and Safety provides in-depth knowledge of chemical, physical, and biological factors affecting food quality, as well as techniques to monitor and improve product safety. The program culminates in an MSc dissertation, allowing students to undertake an independent, applied research project that integrates theoretical knowledge with practical application. Overall, this MSc prepares graduates to address complex food safety and quality issues, innovate in food production, and apply rigorous scientific and managerial approaches to ensure the development of safe, high-quality, and consumer-focused food products.
