COURSE CURRICULUM

The Food Science degree at Abertay University provides a robust and practical education in food development, safety, nutrition, and consumer science. In Year 1, students are introduced to key foundational topics through six core modules. These include Fundamentals of Nutrition, Applied Biological Sciences for Food and Human Health, Nutrition and the Consumer, and Safe Food Handling, along with Social Science for Sport and Exercise. Abertay 101 helps students build the academic skills necessary for success at university level. This year lays the groundwork for understanding how food affects human health and consumer behaviour.In Year 2, students deepen their understanding of the physical and social sciences related to food and nutrition. Core modules cover Food Design and Promotion, Nutrition through the Lifespan, Public Health Nutrition and Health Promotion 1, Key Concepts in Sport and Exercise Physiology, and Food Characterisation. These modules focus on how food is promoted, processed, and adapted to meet the nutritional needs of people across different life stages.Year 3 shifts focus toward technical application and industry engagement. Students study Food Processing, Food Properties and Functionalities, and New Product Development 1, which introduces the principles of developing new, safe, and appealing food products. A work placement in this year allows students to apply classroom knowledge in a real-world setting, gaining experience in the food or health industry and building valuable professional connections.In the final year, students explore more advanced topics through Food Safety and Microbiology, Current Topics in Food, and New Product Development 2, which continues from Year 3 with a focus on innovation. They also complete modules in Research Methods and Management and carry out an independent Honours Project. Upon graduation, students are well-prepared for careers in food manufacturing, product development, quality control, or further study in food science and nutrition.
