COURSE CURRICULUM
The BSc (Hons) in Brewing and Distilling is a four-year honours degree designed to equip students with the scientific, technical, and business knowledge required for careers in the malting, brewing, and distilling industries. From the first year, students gain a strong foundation in the sciences, including biology, chemistry, and physics, alongside laboratory and quantitative skills. Core concepts in brewing and distilling are introduced early through elective modules that explore current scientific practices and industry trends.In the second year, students build on this foundation with more specialised subjects, including analytical techniques, microbiology, biochemistry, and engineering principles relevant to brewing and distilling. Practical understanding of raw materials such as malt, water, hops, and yeast is developed alongside quality control and process measurement, ensuring students acquire both theoretical knowledge and hands-on experience.Year three focuses on applied industry practice and professional experience. Students study the brewing process, distillery engineering, environmental management, and research methods while completing a significant work placement in a brewery or distillery. This placement provides real-world experience, allowing students to apply their knowledge and develop industry connections.The final year integrates advanced production, management, and commercial aspects of brewing and distilling. Students study distillation processes, beverage packaging, post-distillation processing, quality management, industry law, and marketing, alongside new product innovation. A major research project allows students to investigate a specialised area of interest, demonstrating problem-solving, research, and technical skills.Graduates from this course are prepared to work in breweries, distilleries, quality control laboratories, production management, research and development, or entrepreneurship within the malting, brewing, and distilling sectors. The degree combines rigorous scientific training, practical experience, and industry-focused business knowledge, producing highly skilled professionals capable of contributing to one of Ireland’s fastest-growing and internationally respected industries.
