The MSc program in Human Nutritional Sciences offers a variety of advanced courses designed to deepen students’ understanding of nutrition, food science, and their impact on human health. Courses such as HNSC 7070: Advanced Problems in Foods and HNSC 7110: Advanced Problems in Nutrition provide students with opportunities to explore complex issues related to food composition, nutrition, and their interactions at an advanced level. Specialized courses like HNSC 7440: Protein Nutrition and Metabolism and HNSC 7480: Mineral and Trace Element Nutrition and Metabolism focus on the roles of essential nutrients in human metabolism and health. HNSC 7510: Flavour Chemistry and Sensory Properties of Foods examines the chemical basis of food flavors and how sensory properties affect food acceptability. The course HNSC 7520: Nutraceuticals in Human Health explores the health benefits of bioactive food components and their role in disease prevention. Public health and policy aspects are covered in HNSC 7530: Nutrition in Public Policy, which addresses how nutrition science informs health policies and programs.
