COURSE CURRICULUM

The Human Nutrition program at StFX offers a comprehensive, multi-year curriculum designed to equip students with the scientific knowledge, practical skills, and professional competencies required for diverse nutrition careers. In the first year, foundational courses such as Intro to Nutrition for Nursing, Intro to Food & Health, and Intro to Foods introduce students to nutrients, dietary needs across the life cycle, food science, and the social and behavioural factors influencing food choice. The second year builds on this foundation with courses in Nutrition Science, Food Science, Nutrition in Human Metabolism, and Professional Practice, emphasizing evidence-based decision-making, ethics, and communication skills. In the third year, students advance to Nutritional Assessment, Nutrition in Chronic Disease, Maternal & Pediatric Nutrition, Sport Nutrition, Community Nutrition, Food Service & Food Production, and Nutrition Research Design, integrating theory with practical applications in health, clinical, and community settings. The fourth year focuses on advanced topics including Food Availability, Nutrition in Global Health, Nutrition in Aging, Policy for Health, Food Product Development, Clinical Nutrition Therapy, Food Service Management, Entrepreneurial Practices, Effecting Change, and Applied Nutrition Research, alongside intensive practicum courses (IHNU 481-483) that provide preceptor-supported hands-on experience in institutional and community settings. Students may also complete an Honours Thesis, developing original research skills. Located in Mi’kma’ki, StFX fosters community engagement, social responsibility, and experiential learning in human nutrition.
