COURSE CURRICULUM

The Graduate Certificate in Sustainable Food Systems and Security requires the completion of 18 credits across six courses. The curriculum begins with SFSS 6100, Our Food System and Sustainability, a foundational one-credit course that introduces students to key concepts and challenges within contemporary food systems. Following this, SFSS 6110, Environment & Food Systems, offers four credits and explores the environmental aspects of food production and sustainability. Students then take SFSS 6120, Food System Economics, a three-credit course focusing on the economic forces that shape food systems and their sustainability. SFSS 6130, Food System & Society, another four-credit course, examines the social dimensions and impacts of food systems, including issues of equity and access. To equip students with visionary and practical skills, SFSS 6140, Creating Our Food System Future, provides four credits devoted to developing strategies and innovations for a sustainable food future. Finally, students complete SFSS 6180, Community Food System – Capstone Project, a two-credit course that synthesizes their learning through a practical project addressing real-world food system challenges. Together, these courses provide a comprehensive interdisciplinary education on sustainable food systems, integrating environmental, social, and economic perspectives. The program equips students with the knowledge and skills necessary to become effective change-makers and leaders in advancing sustainable food systems locally and globally. The online delivery format allows students to balance their studies with other commitments, making it accessible to a diverse group of learners. Completion of these courses leads to a Graduate Certificate that is recognized for its relevance and rigor in addressing complex food security and sustainability issues.
