COURSE CURRICULUM

Conestoga College’s Nutrition and Food Service Management diploma program provides a comprehensive education designed to prepare students for careers as nutrition managers in healthcare and community settings. In Level 1, students build a strong foundation with courses such as Foundations of Food Service Management, Introduction to Nutrition, Math for Nutrition & Food, Professional Practice for the Nutrition Manager, and Sanitation, Safety and Quality Assurance, along with essential college skills in reading, writing, and Conestoga 101. Level 2 expands on this knowledge with Food Service I, Food Production and Modification, Healthy Living, Nutrition Care Across the Lifespan, Nutrition Care I, and Technology in Nutrition Management, helping students develop practical skills for food service operations and nutrition care. By Level 3, the focus shifts to more specialized topics including Nutrition Care II, Menu Development, Financial Management in Food Services, Human Resource Management, Nutrition for Older Adults, and Nutrition Counselling and Education, alongside workplace safety training. These courses deepen students’ expertise in managing nutrition services, addressing diverse client needs, and leading teams effectively. In the final Level 4, students engage in a Field Placement that offers hands-on experience in nutrition and food service management, combined with advanced courses in Food Service II and Food and Nutrition Field Studies, which further hone their practical and theoretical skills. Throughout the program, students must also complete a general education elective each year, broadening their academic experience. Graduates leave the program ready to meet the standards required for membership in the Canadian Society of Nutrition Management, positioning them for successful careers in long-term care, hospitals, and community nutrition services, equipped with both leadership and technical expertise.
