COURSE CURRICULUM

Conestoga’s Culinary Skills program is designed to provide students with comprehensive training in the culinary arts through a combination of theoretical knowledge and hands-on experience. In Level 1, students begin with co-op and career preparation, software applications, and foundational courses such as applied baking techniques, culinary theory, and butchery. They also develop practical skills through applied culinary techniques and obtain essential hospitality certifications like SmartServe and Food Handlers. Level 2 builds on this foundation with courses in nutrition and healthy lifestyle, advanced applied culinary techniques, à la carte cooking, and applied baking techniques II. Students also study culinary theory II, restaurant operations, and food and beverage cost control, equipping them with the knowledge needed to manage both kitchen and business aspects of food service. The program culminates in Level 3 with a co-op work term, giving students the invaluable opportunity to gain real-world experience as chefs in professional kitchens. This hands-on placement allows students to apply their skills in a practical environment, develop professional networks, and enhance their employability in the competitive culinary industry. Throughout the program, students benefit from expert instruction and a supportive learning environment that encourages creativity, collaboration, and a passion for culinary excellence, preparing them for successful careers in a variety of food service settings.
